Laksa Johor

Assalamualaikum...
Holla...
It is not a new recipe from me but I decided to upload this entry because I want to share this menu with my friend from United Kingdom, Yra Binan.  She asked for the recipe when 
she saw this photo which I put it in my Facebook.  
Actually, the recipe was in Bahasa Melayu, I'm afraid that she can't understand it.
So this is for you Yra Binan...wink..wink... 

LAKSA JOHOR

How To Make The Gravy / Sauce :

(A)
1 kg mackerel fish - boiled it then take out the flesh, blend it

(B)
100 gm fish curry paste
2 tbs kerisek *
2 pcs asam gelugur (garcinia atroviridis)
1/4 cup cooking oil
2 cups coconut milk
2 tbs salt - according to your taste
1 packet of spaghetti - I prefer the San Remo angle hair spaghetti
*fresh old coconut grated, toasted it in a pan until it's turn to brown.  Then put it into the dry grinder or you can use pestel and mortar to ground it to paste.

(C)
6 shallots
4 garlics
2 lemon grass
2 inch ginger
- place it in the food processor then process until smooth

(D)
1 bunch of daun kesum (Vietnamese Coriander) - place it in the food processor then process until smooth

Directions:

  • Heat the oil in a pot, put in the (C), fried it till fragrant.
  • Then put the curry paste - add some water.  Cooked it until you can saw the oil coming up and you can smell nice aroma from the curry paste.
  • Pour the coconut milk, then put the asam gelugur and salt.  
  • Cooked it until boiled then place the daun kesum paste and kerisek.
  • Boiled the gravy a few minute, then off the heat.
  • Now boil a pot of water to cook the spaghetti - you can refer how to cook the spaghetti from the packet.
For Garnishing :

1 cucumber - peeled the skin then seeded it, cut it finely
4 long beans - chopped
1 bunga kantan (torch ginger flower) - chopped
1 bunch of mint leaves - chopped
6 calamansi limes - cut it to half

How To Prepare The Sambal Belacan :

50 gm shrimp paste (belacan)
120 gm fresh red chillies - seeded
5 bird's eye chillies
1/2 tsp salt
2 tbs cooking oil

Directions :
  • Heat the oil in a pan.
  • Add belacan and fry over low heat till fragrant.
  • Put in both chillies, fry it about a minute.
  • Then remove from heat.
  • Tip into a food processor and blitz until finely chopped.
How To Serve Laksa Johor :
  • Place the spaghetti into a bowl, pour the gravy on it.
  • Sprinkle with the cucumber, long beans and mint leaves.
  • Then put in the sambal belacan and calamansi lime.
  • Now you can eat the yummylicious Laksa Johor, don't forget to squeeze the calamansi lime.

Laksa asam mabelles...

uikss...tetibe cikNor rasa nak tayang laksa asam kat sini...hehee...bez kalau makan panas-panas...mabelless...Laksa asam senang dimasak sedap dimakan. Nak resepi...

Bahan-bahan:
1 bungkus laksa (kalau tak der yg basah boleh guna laksa kering tapi kene rendam lbh kurang 2 jam pastu rebus supaya lembut)
1 kg ikan kembung / ikan selayang / ikan tamban (rebus dulu ikan ni pastu sejukkan)
1 biji bawang besar
15-20 tangkai cili kering
5 keping asam keping
sedikit belacan (kalau tak nak letak pun tak apa)
garam secukup rasa
2 kuntum bungan kantan
sedikit daun kesum

Bahan tabur:
timun
limau nipis
telur rebus
kacang panjang
cili besar
-sebenarnya bahan tabur ni ikut tekak kite jew

Cara-cara:
-Kisar ikan masukkan dlm periuk
-cili kering + bawang + belacan dikisar halus kemudian campur dlm periuk yg letak ikan kisar tadi pas tu bolehlah dimasak, jgn lupa masukkan asam keping & garam.
-bile dah mendidih masukkan daun kesum & bunga kantan.
-bile asam garamnya dah terasa bolehlah matikan api.

Masa nak makan bolehlah ditaburkan dengan bahan-bahan taburan td...

Jom Masak-masak ! (Laksa Johor)

en. Hubby punyer faberite...laksa Johor
Oke, hari ni kite belajar masak laksa Johor pulak. Laksa Johor jarang dijual kat warung atau kedai-kedai biasa kecuali kat Restaoran Laksa Shack...so kira eksklusif gak la resepi ni...hehehe...

Kat bawah ni bahan-bahannye yea Cik Kiah :
1 ekor ikan tenggiri (kalau xder ikn kembung/selayang pun boleh tapi 1kg jgn lak 1 ekor!)
2 paket kecil rempah kari ikan
1 biji kelapa (amik santan jer...hampasnyer buang taw...)
2 sudu besar kerisik
2 keping asam keping
1 ikat daun kesum
2 batang serai
2 inci halia
1 bungkus spegeti
6 biji bawang merah
4 ulas bawang putih
sedikit minyak untuk menumis
garam secukup rasa
ulam untuk tabur atas laksa (timun, kacang panjang, bunga kantan & daun pudina)
limau kasturi
sambal belacan

Sekarang mari kite tengok mcm mna nk masak lak.
  • Ikan direbus, keluarkn isinya & kisar.
  • Bawang merah + bawang putih + halia + serai dikisar lumat (Bahan A).
  • Tumis bahan A sampai wangi lps tu masukkan rempah kari masak sampai pecah minyak.
  • Masukkn isi ikan & santan (kalau agak pekat, tambah air sikit taw).
  • Kisar daun kesum kemudian campurkn dlm kuah td.
  • Masukkn asam keping & garam secukup rasa.
  • Masak kuah sampai mendidih.
  • Jangan lupe rebus spegeti sampai lembut kalau tak mkn kuah jer pulak...
  • Ulam-ulam td dihiris comey-comey untuk tabur atas laksa.
  • Bile dah siap bolehlh memulakan upacara....makannnn =)
